I’m Hagen — an entrepreneur based in Dublin. GravyCuts is my food project to bring a premium, gravy-ready potato side to Irish pubs and kitchens.

The idea is simple: not another “chip alternative”, but a dedicated side designed for gravy-based dishes and comfort food plates — built to work in real service.

I’m building this the practical way: pilot partners first, then step-by-step rollout once kitchens love the results. That includes consistent product supply, clear prep guidance, and a straightforward ordering path that works for service.

From Thuringia to Ireland - The Story of GravyCuts

The story of GravyCuts begins more than 200 years ago in the German region of Thuringia.

For generations, people there have been making traditional potato dumplings using a unique method that combines raw grated potatoes with cooked potatoes. This special technique creates a potato texture that is soft, rich and particularly good at absorbing gravy.

Over time, this traditional idea inspired the development of a potato product designed to be fried while keeping the same characteristic: crispy on the outside and soft inside.

10 December 2025

While travelling through Thuringia, a region well known for its potato traditions, I visited a place connected to local potato production.

During a conversation about regional food culture and traditional potato products, a simple question came up:

Could a product like this work in Irish pubs and restaurants?

For me this moment also had a personal meaning. Many years earlier my father had helped build a machine used for the production of traditional potato products. Because of this, there had long been a connection to this region.

From this unexpected meeting, a concrete idea slowly began to develop.

28 December 2025

I wrote the first email to Germany explaining my idea of bringing this traditional potato concept to Ireland and introducing it in pubs, restaurants and hotels.

13 January 2026

I registered the business name "Gravy Cuts Food Trading" in Ireland with the Companies Registration Office.

1 February 2026

I filed the GravyCuts trademark with the Intellectual Property Office of Ireland.

March 2026

I travelled to Germany to continue discussions about a possible cooperation and about introducing the product in Ireland.

During this visit I was also able to present the product to professional chefs and receive valuable feedback about how it could work in professional kitchens.

The response was very encouraging.

15 April 2026

The first GravyCuts pallet is officially on its way to Ireland.

Today

The goal is to introduce GravyCuts step by step in Ireland, starting with discussions and tastings with pubs, restaurants and hotels.

GravyCuts are inspired by a long potato tradition, but designed for modern kitchens and for the comfort food dishes that are loved across Ireland.

The journey has only just begun.
